On Monday I posted a recipe for a healthy alternative to Eggplant Parmesan.  When I made it, I had a lot of leftovers, and instead of eating the eggplant with pasta again and again, I ended up eating it in a sandwich.  I secretly loved this sandwich even more than I loved the pasta dish.

Vinegar-soaked cucumber, or kyuuri no sunomono, is a Japanese dish I learned to make last week at my friend Eriko's house.  It's a simple and healthy vegetable dish that goes really well with Korean food, as I found :)

Sesame seeds add subtle but amazing flavor to many dishes.  My mom uses it a lot in her food, so she buys raw sesame seeds in bulk, then toasts them herself.  And then she puts some in a container and sends them home with me.  I saw these black sesame seeds at the Asian market and decided to replenish my decreasing stock.  I bought the black ones because I think they taste better.

I've been experimenting with ways to marinade chicken with things I already have in my pantry (read: no time, no money) and I came up with this easy marinade that forms a sweet and spicy glaze on chicken that is just delightful.

A classic Korean beverage: grape juice with big peeled grapes in them!

Ingredients (4 side servings):
-4 medium potatoes
-1 tbsp salt
-1 tbsp pepper
-2 tsp paprika
-1 tbsp garlic powder
-3 tbsp olive oil

1.  Preheat oven to 425F.


Scrub the potatoes.
